These past few years, NY has stepped up it’s BBQ game. So there has been a slew of good BBQ restaurants opening up. Hill Country BBQ is one of them and maybe the most known? Even Texans come here to eat. Ordering your food here is fun. You go up to the counter just like going to a butcher and order the cuts and quantity of BBQed meat you want. They place it in a big piece of paper with wonder bread to soak up the juices and start piling on that meat like so. Order some sides in a similar manner, bring your package of meat to your table and enjoy with your friends. There’s no clean way to eat this so dig in. Lots of paper towels are readily provided so go ahead and be messy. It’s part of the fun. The moist brisket here is no joke! You’ll definitely come back for more.
